The Island Smokery

The Island Smokery, the home of Orkney smoked cheddar. Using only the highest quality cheddar produced locally from milk from Orkney cows, we have created a range of smoked cheddars, flavoured cheddars and also Orkney butter.

Based in the picturesque seaside town of Stromness on the Orkney Islands in the far North of Scotland, the Island Smokery, owned and run by Callum and Fiona MacInnes, has been producing a range of smoked Orkney cheddars since 2004. In May 2017, the Smokery relocated to new premises allowing an increase in production, which has opened new market opportunities.

The Buffalo Farm

The Buffalo Farm are the sole producers of Scottish Buffalo Mozzarella & ice cream in Scotland. Situated in the beautiful Kingdom of Fife, our state-of-the-art milking parlour is adjacent to our purpose built dairy where we produce multi award winning Scottish Buffalo Mozzarella using pasteurised milk from our own grass-fed herd and vegetarian rennet. We farm regeneratively and rotationally, relying on natural food waste digestate and manure to grow lush green, nutrient rich grass on which our herd of over 500 water buffalo is free to graze. It’s the deliciously rich & creamy buffalo milk which makes our buffalo farm mozzarella so uniquely Scottish.

Yester Farm Dairies

Yester Farm Dairies is run by husband and wife team Simon and Jackie McCreery, operating alongside the family farm at Yester Mains. Once milking is finished on the farm the milk can be piped straight from the milking parlour to our modern pasteurisation plant and cheese room on-site where we produce an artisan range of soft cheeses, cottage cheese, yoghurts, creme fraiche, soured cream and fiore di latte mozzarella.

Our cows are very important to us so we look after them well. All our cows enjoy time out at grass on the lush East Lothian pastures but they are also fed a nutritionally balanced diet which includes grass or silage (mowed grass), wheat and barley all harvested from our farm. “From farm to fridge” is not just a strapline for us, it is an important part of our ethos and identity.

St Andrews Farmhouse Cheese Co Ltd

St Andrews Farmhouse Cheese Company was formed in 2008 when the Stewart family identified a gap in the market in Fife for an artisan farmhouse cheese. Today, Robert and Jane – together with sons Ben and Adam –  make cheese using milk from their own herd of home bred Friesian Holstein cows .  Unpasteurised milk, heritage cultures and traditional methods – combined with a generous measure of passion – have resulted in an award winning range which includes Anster (a cheshire style cheese aged for 2 months to give a pure white crumbly curd encased in a natural rind); Red Anster (the flavour added ‘sister’ cheese to Anster with added chives and garlic); St Andrews Farmhouse Cheddar (aged for a minimum of 9 months to produce a buttery yellow curd with a full flavoured finish); Smoked Anster (smoked over oak chips) and Smoked St Andrews (smoked over whisky barrel chips).  The cheese is marketed throughout the UK via a network of wholesalers supplying the trade, and also via the online shop.

Highland Fine Cheeses is the home of the award-winning Minger, Morangie Brie and Strathdon Blue. Starting with a batch of Crowdie in the bathtub, the Stone family has been making traditional cheeses since the 1950’s. Today, under the vision of Rory Stone, a man with a passion for ‘smelly little things’, our focus is on mould ripened and washed rind styles, developing world-class creamy cheeses with quirky names like Minger and Fat Cow.

Based in Tain in the northeast of Scotland, our small business operates from the dairy of Blarliath Farm. Once a smallholding with 14 Shorthorn cows and a randy bull called Geordie that would lift the gate and set off to town for a little fun, the Farm is now an industrial estate that no longer paints the picture of rural romance – Rory suggests a stick of dynamite might improve it – but the fermenting and maturing taking place within its old walls remains truly artisan.
