Wee Comrie is a soft, mould-ripened cheese that offers both delicacy and depth. Inspired by continental styles yet firmly rooted in Scottish terroir, it is crafted using pasteurised cow’s milk and gently ripened to achieve a supple, yielding texture beneath its bloomy white rind.
On the nose, Wee Comrie presents fresh dairy notes with hints of mushroom and sweet cream. As it matures, subtle earthy aromas develop, adding complexity without overpowering its gentle character. The paste becomes increasingly soft and creamy, often developing a luscious, almost spoonable centre when perfectly ripe.
